Chinese Chicken Pizza

I'm playing catch-up again; I made this yummy pizza for dinner a few weeks ago. The recipe comes from The Surreal Gourmet, who is indeed, very surreal. If you haven't heard of him, check out his site for delights such as Dishwasher Poached Salmon with Piquant Dill Sauce....

Once the dough is made, this pizza is really quick and easy to assemble. I really liked being able to just slosh some hoisin sauce onto the crust instead of slaving over the stove making tomato or BBQ sauce! Using ready-cooked chicken was also a real time-saver. If you were to use ready-rolled pizza dough then this would make a perfect week-night dinner.

We both really liked the pizza. The hoisin sauce combined with the chicken and the veggies gave it a real sweet & sour flavour. I'll definitely be making it again and again.

Chinese Chicken Pizza, adapted from The Surreal Gourmet

Serves 2 as a main meal.

Crust
225g plain flour
1tsp caster sugar
1 tsp salt
1/2 packet easy-blend yeast (3.5g approx)
1 tbsp extra-virgin olive oil
approx 140ml of warm water

Topping
4 tablespoons hoisin sauce
small pack store-bought chinese bbq chicken (roughly equivalent to 2 chicken breasts)
4 spring onions, finely sliced
2/3 cup coriander leaves, lightly-packed, stems removed before measuring
1/2 red pepper, thinly sliced
1 ball reduced-fat mozzarella, shredded


Heat the flour in the microwave for about 20 seconds. Stir well. Stir in the sugar, salt and yeast. Make a well and pour in the oil and about half the water. Pour about half the water into the well and stir well. Mix to a soft but not sticky dough adding more water as necessary.

Knead for 5 minutes then put in a clean bowl and cover tightly with clingfilm. Leave to rise for about an hour until doubled.

Preheat the oven to Gas Mark 9 (or as high as your oven will go). Move a shelf up to the top third of the oven. Place a thick baking sheet on the shelf to preheat along with the oven. If you're lucky enough to have a baking stone then you already know what to do with it.

When you're ready to eat, spray another heavy baking sheet with olive oil. Punch down the ball of dough and roll it out to approx 10" circle. Transfer carefully to the baking sheet and pull it out, working from the centre, to a 14" circle (or in my case, a rather rough square). Build up the edges slightly.

Spread the hoisin sauce over the pizza base. Evenly place the chicken, spring onions, coriander and pepper on top. Sprinkle over the mozzarella.

Place the baking sheet in the oven on top of the preheated sheet. Bake for 12 minutes, turning the sheet around after 9 minutes to ensure that all of the crust is cooked fully.

Remove from the oven, divide into slices with a sharp knife and eat quickly!
