With a glass of Pimm's in hand, I am rather prone to floating off into a fantasy of middle-England village life, complete with village fĂȘtes and all their inherent competitions. Naturally I always win the blue ribbon for the best Victoria Sponge and my jams are renowned throughout the entire county.
Picturesque fantasies aside, Pimm's, to me, is as quintessentially English as watching cricketers out on their village green and thatched cottages. Before I moved to England that was my view of the entire country, and while I know that England is far more than romantic stereotypes--both in good and, sadly, bad ways--I still get a weird little thrill every time I see our village team out practising in their whites.
I guess I'm an old romantic...
But back to Pimm's. Its a bit of an odd drink. On the face of it, a drink of spirts infused with vegetables and herbs just doesn't sound attractive. However, add some lemonade and some ooograh as Detritus the Troll would describe a sprig of mint, some slices of cucumber, and maybe a slice of lemon or orange, and you've got a little slice of heaven in a glass.
It's just so refreshing and drinkable. That's the down-side of it, unfortunately. You can sink quite a few glasses of Pimms while completely forgetting that it's boozy, and only remember when you try and stand up. But it's worth it.
And so to the sorbet... While happily drinking Pimm's pre-Wimbledon, it struck me that it would make a fantastic sorbet. So, after some research into just how much Pimm's No.1 I could get away with using, I made a syrup infused with the usual suspects--orange, lemon, mint, cucumber--and added Pimms.
The resulting sorbet was everything I had hoped it would be. Clean, refreshing, and complex in flavour. Unmistakably Pimm's.
Pimm's Sorbet
Due to the healthy amount of Pimm's, the sorbet will scoop directly from the freezer and starts melting immediately. You can get round this a little by freezing your serving glasses, or, reducing the amount of Pimm's used in the recipe.
400ml water
200g granulated sugar
juice of half a lemon
juice of half an orange
handful of mint leaves
1/8th cucumber, chopped into chunks
200ml Pimm's No.1
Bring the sugar, water, lemon juice and orange juice to the boil, then add the mint, chopped cucumber and Pimm's. Turn the heat to lowest possible, cover and leave to infuse for 20 minutes. Allow to cool, then when the mixture is cold, strain it through a fine-meshed sieve and churn it in your ice-cream machine. If you have time then chilling the mixture thoroughly in the fridge will reduce the churning time.
Serve scoops of sorbet in chilled glasses and garnished with some mint sprigs or a slice of lemon/orange. Not strawberry. Pimm's is not a fruit salad!

I thought you would have seen this one Jules!! Love Pimms too, went off it for a couple of years after a bad Pimms hangover, but now back enjoying it. This is a great recipe, especially as I have a new ice cream machine!!

Hi GirlCanBake! Pimm's can be used in loads of different ways. I've seen it in trifles--in place of the sherry--used to flavour whipped cream to go with strawberry shortcake, or in a fruit jelly. It's very versatile, but by far the best thing to do with it is drink it! You can't beat a classic Pimm's and lemonade--but the sorbet comes damn close!

This sounds great and highly refreshing. Did it freeze ok being quite alcoholic.

Hi Katie! Yes, it froze quite well. I'd say it got to about 3/4 of the thickness of a regular sorbet in the machine but firmed up very well in the freezer. It stays scoopably firm--like sort-serve ice-cream--so is always available if you fancy some!

I drink Pimms cups all the time during the summer, but have never thought about doing sorbet!
