Linguine with lemon, garlic and thyme mushrooms

This is one of my favourite summer recipes. I made it rather a lot last summer after Nigella Express, the book it hails from, was published.

As you'd expect for a recipe from an 'express' cookbook, this dish is quick to prepare. You can slice the mushrooms and put together the rest of the ingredients while the linguine cooks. So, if you're quicker about the kitchen than I am, you could potentially have this one the table in 10 minutes on the nose.

Even if you're not in a hurry, this recipe is well worth making.

This is a really greedy dish. Once you've had a forkful, you are compelled to gobble the rest and then eye everyone else's plates hopefully It's that good.

No one flavour dominates; they all meld into a deliciously fresh and fragrant melange. The mushrooms, sliced paper-thin, yield their juices and soak up the marinade. As Nigella notes, the mushroom mixture makes a fantastic salad. I saved a bowlful for snacking purposes, and they're even better after sitting overnight in the fridge. There's plenty of delicious juices too; perfect for mopping up with crusty bread.

Linguine with lemon, garlic and thyme mushrooms

Serves 4-6

225g chestnut mushrooms
80ml extra virgin olive oil
1 x 15ml tbsp Maldon salt, or 1½ tsp table salt
1 small clove garlic, crushed
zest and juice of 1 lemon
4 sprigs of fresh thyme, stripped to give 1 tsp leaves
500g linguine
1 bunch fresh parsley, chopped
2-3 tbsp freshly grated Parmesan, or to taste
freshly ground pepper

1 Slice the mushrooms finely and put in a large bowl with the oil, salt, crushed garlic, lemon juice and zest, and marvellously scented thyme leaves.

2 Cook the pasta according to packet instructions and drain loosely, retaining some water. Quickly put the drained pasta into the bowl with the mushroom mixture.

3 Toss everything together well, then add the chopped parsley, grated cheese and pepper to taste, before tossing again, and eat with joy in your heart.

Thanks, Beth! I really liked Nigella Express and was surprised that the book was slated so much. (I can understand people not liking the series, though. It was a bit embarrassing in places :P)
