This week I am in need of some serious comfort food. The only thing I found myself wanting was some good chocolate chip cookies so I dragged myself into the kitchen to whip up a batch. Chocolate is always comforting but there’s something especially comforting about a stack of chocolate chip cookies and a glass of milk, don’t you think?
The nice thing about these cookies is the crispy exterior and the almost truffle-textured interior that is also slightly chewy. This texture is achieved by the use of two kinds of sugar: the white (granulated) sugar creates the crisp exterior and the brown sugar aids in making the cookie chewy by absorbing (and retaining) plenty of moisture.
The cookie dough is very sturdy. I whipped up the batter on Tuesday afternoon, measured the cookies out on Wednesday morning, and finally baked them on Wednesday afternoon. The cookies are in fact better if you bake the dough from a thoroughly chilled state. You could probably keep the dough in the fridge for just under a week and bake fresh cookies every day if you wanted to! Freezing the shaped dough would also work, I’d defrost it in the fridge overnight before baking. If you wanted to get really fancy, you could roll the dough into a cylinder and then cut off cookies as and when you wanted to bake. I’ve never managed this successfully – maybe I need a magic knife from one of those TV infomercials that will Cut Anything!
Chocolate Chip Cookies
My recipe was procured from eGullet eons ago. I’ve tried looking for it online but things seem to have changed around there and I can’t find a direct link (or indeed, anything). I have, however, been entirely faithful to it since I stumbled across it and I hope the original author doesn’t mind me reproducing it here.
Yields approx 17.
300g plain (all-purpose) flour
1/2 teaspoon bicarbonate of soda (baking soda)
1 teaspoon fine salt
170g unsalted butter, melted and cooled slightly
215g light brown sugar
120g granulated white sugar
1 tablespoon vanilla extract
1 large egg
1 large egg yolk
300g milk chocolate chips
Variation: Use dark brown sugar and plain chocolate chips for a more adult flavour. This is what I normally do, but I can’t seem to find plain choc chips anywhere at the moment….
Sift together flour, bicaronate of soda and salt. Set aside.
Stir together melted butter, brown sugar, sugar and vanilla. Add egg, then the yolk. Beat well to ensure that egg is evenly distributed. Stir in dry ingredients, then fold in chocolate chips until incorporated. It will look as if there are too many chocolate chips but the dough will be able to hold them all. Cover with clingfilm and chill dough until firm. At least 30 minutes.
Preheat the oven to 190C/Gas Mark 5.
Drop 1/4 cup sized “hockey puck shaped” mounds of dough onto a greased baking sheet. You can use a silpat sheet instead of greasing which works very well. I use a 1/4 measuring cup to both measure and shape the dough which works perfectly.
Bake in preheated oven for approximately 10-12 minutes or only until the edges begin to turn golden. (They’ll look and feel underdone but they’re ready.) Cool on the sheet for 1 minute and remove with a wide spatula to a cooling rack. Cool thoroughly and enjoy!

I have just finished making these cookies and they are simply the BEST cookies I have ever tasted. They are just how I like my cookies, slightly chewy and mouthwatering on the outside.
Hi Rhona! Thanks! Glad you enjoyed them.
Hi Alex! Chewy and a little too soft in the middle is just how a cookie should be, in my opinion. Glad you agree
as a student with a massive sugar tooth i really seriously loved these cookies!! …bunch of us used m&ms aswell as plain chocolate chips to make them look funky and they were gone within seconds

I took a phot as they came out of the oven, http://www.flickr.com/photos/32013199@N04/2995644247/

[...] Chip Cookies I found this recipe for Chocolate Chip Cookies on A Spoonful of Sugar this week and decided to give them a go. [...]
lovelovelove this recipe! so forgiving, when i need to sub diff sugars, or when i don’t have a scale handy and need to eye my quantities by volume. i’ve made these so many times – always a double batch – and they always go over well. i like my cookies underdone, soft and chewy, and these are perfect! they are a classic!
one question for you – i’m interested in adding an oatmeal choc chip to my regular cookie roster, and searching for a recipe that looks good enough to measure up to this one – any suggestions on how to mod this recipe to make it oaty?
many thanks for your feedback AND for the best choc chip cookies EVER!
Seriously, the best cookie I have ever baked! Perfect texture, slightly crisp on the outside, and amazingly soft in the middle. Thanks for posting.
Thankyou these worked perfect! So so good and tasty, foolproof
Can u cut these cookies into shapes? Thanks
Hi Mason! No, you can’t cut these cookies into shapes. They spread a lot during cooking and any shape would be lost.
My son (age 8 ) baked these cookies today. Easy to make and he described them as lush!!! They were the best cookies we have tasted!! Thanks for the recepie.
Love this recipie! I make them as gifts in a box with some tissue paper and a bow. Everyone loves them and always ask for more. Thanks so much for sharing!
This is definately the best cookie recipe I’ve ever used. Can you tell me how I would make a double chocolate version? Substitute some flour for cocoa powder?
Thanks so much for the recipe!
I’ve never made a double chocolate version of these cookies but yes, I would replace some of the flour with cocoa. I’d suggest 250g flour and 50g good cocoa powder. (I recommend Green & Black’s cocoa powder.)
I thought you’d like to know, I tried this recipe yesterday and they turned out great!
Yay! Thanks for letting me know, Ros
Made this cookies today and followed the recipie but they kind of took over my oven! God knows why they expanded so much!
I’m going to try and bake these tomorrow its years since i did baking! I hope it goes right.
I haven’t got any brown sugar though
Steph xx
Good luck, Steph. I’d definitely try and get hold of some brown sugar, though. The flavour will be so much better and it will also affect the texture if it’s left out.
absolutely perfect! im awful at baking but wanted to bake some cookies for valentines day, my first attempt with another recipe was horrendous, but these are amazing!
Having tried a few recipe’s my boyfriend and I continued the search for the perfect cookie.
) Oh and I recommend a white and milk choc chip combo, heavenly!
We have stopped looking now, having found it!
Thanks, they’re delicious and rarely stay on the rack long enough to cool
I have used white and milk chocolate and they are in oven now! I was unsure how they would turn out but having read this my mind is put to rest!
Hi there,
My boyfriend is diabetic. Can I use sweetener instead of white sugar to reduce the sugar content of the recipe?
Thanks!
I’ve never used sweetener in cookies—and rarely use it at all, TBH—so I have absolutely no idea. Sorry!
Oh my god….heaven on a plate…
Just got mine out the oven and couldn’t wait for them to cool down before I had a try….gorgeous.
Thanks for an amazing recipe!
i can’t wait until i make these cookies when i do i will tell you how delicious they are
This recipe is amazing, the cookies are amazing =-)
these are lovely.. and very easy to make
Is there any reason you can’t chop up some dark choc rather than buy ready made drops?
Proof of the pudding( or biscuit) is the speed at which they disappeared! Magic!
Stumbled across this recipe by accident and will never use another cookie recipe again. Forwarded to mum as she loves cookies as much as me. So, from myself, mum, nan, 3 cousins, and 8 other students (all of who are now addicts to these cookies) THANKYOU!
this is the best recipe ever! Definitively Ultimate like said before^^
I tried these cookies with chunks of choc in them rather than chocolate chips. I froze the chocolate first (to make it brittle) and then hit it with a rolling pin and it was ace! Worked well.
Be careful with your sugar choice though – using a dark soft brown sugar made my cookies go all flat and spread out on the baking sheet. Turned out ace when I actually *followed the recipe* and used light brown sugar!
Wonderful recipe though! Will definately be making these again.
The best chocolate chip cookies EVER. These may one day lead to a new career for me, ha! Or at least a source of income. Who could resist these? I also just baked up a test batch of a double chocolate version with toasted walnuts replacing the chocolate chips and it worked!
I stumbled across this recipe after googling “best cookie recipe in the world” – and i’m happy to say it absolutely delivered on its promise!
I needed to bake some cookies very last minute and couldn’t get my hands on any chocolate chips. i substituted with smarties though and it worked perfectly (and looked pretty cool!)
Thanks very much
hia!
great recipe!
thanks!
x
mmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmmm!!!!
Well i tried these for the second time tonight and they did turn out better…. 2 things though – I only used 200g of choc chips and that was *plenty*. Secondly, I put the second batch in and my baking paper caught fire!!!! Not sure how that happened but ruined my second batch =(
Thanks for the recipe.
Hi Jess. I can’t really decide from your comment whether you liked the cookies or not, but I hope you did.
Everyone has different ideas of what makes the ultimate chocolate chip cookie—for me, it should be packed with chocolate chips. And so this recipe is
Sorry to hear about the baking parchment—that has never happened to me!
Sorry re-reading I can see what you mean about my ambiguous comment! Yes I definitely did like them a lot. The smaller amount of choc chips worked for me though.
Yeah that is weird with the baking paper, no way it should have caught fire… the oven wasn’t that hot and it wasn’t touching an element! thanks for sharing the recipe x
I love these cookies! Definitely my one and only cookie recipe now – also very nice with hazelnuts in I’ve found! And you can cut them into shapes, when you’ve taken them out of the oven, wait till they’ve cooled slightly, and just use your cutter then! I made heart shapes for Valentines! (Obviously you do get some wastage, but you just eat those bits!)
Awesome recipe, delicious cookies… making another batch tonight! Thanks for sharing
Hi, this cookie recipe is AMAZING me and my mates were having a cooking competition and I made these cookies and won!! Thanks so much they are great…also try making a cookie sandwich with Ben and Jerry’s ice cream
tres bon
x
Just about to put my first ever batch of homemade cookies into the oven, I’ll let you know how they turn out !! Is there somewhere I could share a recipie ? I’ve got a killer Lemon Cheesecake and it seems cruel not to share !!
One thing though …., how big is a hockey puck ??
Haven’t made these in a while, but if I remember rightly, the portions of cookie dough were about 5cm in diameter and about 3cm high. (A lot smaller than a real hockey puck, but the same sort of shape!)
How can you not make these every day ?!?!?!?!?!?!? I think I may have to goto cookieholics anonymous !!
For tge first time my chocolate chip cookies came out great!!! This recipe was fab, although i forget to put only the yolk in and put two eggs in instead. Does that make a big difference?
I tried with two eggs and the mixture was a little too soft, I tend to use a choc bar cut up instead of chips (I like BIG chunks !!) and when I was cutting the dough they kept loosing their shape. Also when they were cooked they seemed a little bland
chung cookies!! mmmm cookies munch munch munch
oh my good sooooooooooooooooooooo amazing wow
i cant get over how good they r !!!
